Vegan Pesto Pasta with Toasted Walnuts

  • 4 cups dry small shell pasta
  • 2 6.5oz containers vegan basil pesto (Meditalia or similar)
  • 1.5 cups chopped walnuts
  • 1 Tbsp earth balance
  • 5 tsp nutritional yeast
  • Adobo seasoning
  • salt

Toast walnuts over medium heat with Earth Balance and Adobo seasoning.

Cook pasta as directed; rinse well and drain. Add pesto, nutritional yeast, toasted walnuts and salt to taste. Mix well. Good fresh or cold as pasta salad.
