Vegan Fruit Cobbler

Adapted from this recipe.

  • 1¼ cups sugar
  • 1 cup flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup unsweetened plain high-protein soymilk, such as Edensoy
  • ½ cup Earth Balance butter, melted
  • 12 - 14 oz (2 cups, heaping) frozen fruit, such as blackberries, peaches, etc

Whisk together 1 cup sugar, flour, baking powder, salt and milk just until blended; whisk in melted butter. Pour batter into a lightly greased 12- x 8-inch baking dish; sprinkle fruit and remaining 1/4 cup sugar evenly over batter.

Bake at 350° for 1 hour or until golden brown and bubbly.
