The tried and true recipe, for 2 waffles:
- 1 1/3 cups all-purpose flour
- 2 tsp vegan sugar
- 2 tsp baking powder
- ¼ tsp salt
- scant ¼ tsp cinnamon
- 2 tsp Ener-G egg replacer powder
- scant 1½ cups unsweetened soy milk (Edensoy unsweetened is best)
- ¼ tsp vanilla
- 2 Tbsp peanut or vegetable oil
Combine flour, sugar, baking powder and salt in medium bowl. Thoroughly mix egg replacer powder with soy milk in large bowl, then whisk in vanilla and oil until well mixed. Preheat waffle maker and whisk dry ingredients into wet ingredients until dry ingredients are thoroughly moistened.
Pour 1 cup batter (or as directed for your waffle maker) onto the center of the waffle maker grid. Brown as desired, about 4 min 30sec. Makes about 2 round Belgian waffles, using 1 cup batter each.
The untweaked recipe, for 3 waffles:
- 2 cups all-purpose flour
- 1 Tbsp vegan sugar
- 1 Tbsp baking powder
- ¼ tsp salt
- ¼ tsp cinnamon
- 3 tsp Ener-G egg replacer powder
- 4 Tbsp warm water
- 1¾ cups unsweetened soy milk
- 1/3 tsp vanilla
- 2½ Tbsp peanut or vegetable oil
