This is not really intended to be a highly accurate reproduction.
- 1lb rotini or elbow macaroni
- 28oz can stewed tomatoes, undrained
- small can tomato paste
- 1/2 small onion, chopped
- 1 large green pepper, chopped
- 12oz or more chopped mushrooms

14oz Gimme Lean sausage style ground doesn't keep well -- try Yves?
- salt, pepper, spices (onion powder, garlic powder, red pepper, "Italian seasoning," pinch sage) to taste
- Cook pasta according to package directions (make it a bit soft), rinse, drain, set aside.
- Brown sausage over medium high heat with a little peanut oil and 2/3 the salt/pepper/spice mix. Set aside.
- Sautee onion, pepper, remaining spice mix in olive oil over medium high heat until onion is softening. Add mushrooms, continue to sautee until they are hot giving off liquid.
- Add stewed tomatoes and tomato paste. Mix well and heat until entire mixture is bubbling evenly.
- Add pasta, toss, and serve.
