Vegan American Chop Suey

This is not really intended to be a highly accurate reproduction.

  • 1lb rotini or elbow macaroni
  • 28oz can stewed tomatoes, undrained
  • small can tomato paste
  • 1/2 small onion, chopped
  • 1 large green pepper, chopped
  • 12oz or more chopped mushrooms
  • 14oz Gimme Lean sausage style ground doesn't keep well -- try Yves?
  • salt, pepper, spices (onion powder, garlic powder, red pepper, "Italian seasoning," pinch sage) to taste
  1. Cook pasta according to package directions (make it a bit soft), rinse, drain, set aside.
  2. Brown sausage over medium high heat with a little peanut oil and 2/3 the salt/pepper/spice mix. Set aside.
  3. Sautee onion, pepper, remaining spice mix in olive oil over medium high heat until onion is softening. Add mushrooms, continue to sautee until they are hot giving off liquid.
  4. Add stewed tomatoes and tomato paste. Mix well and heat until entire mixture is bubbling evenly.
  5. Add pasta, toss, and serve.
