Lentil Soup with Dijon Mustard

1. sautee up your celery, onions, carrots.. 2. when everything gets soft, add some french lentils, the herbs that are typically found in a bouquet garni, and add water to cover 3. drop in a tablespoon of djion mustard. make sure it dissolves 4. cook until lentils are tender (french lentils don't break down) 5. adjust your seasonings.. you might wanna add more mustard.. add some acid (red wine vinegar or lemon juice)... salt.. 6. while soup is still warm, add a small handfull of chopped flat leaf parsley. (seriously, don't skip this. it makes it taste way fresh! and add a dimension) 7. nrom nrom nrom
