Chinese Egg Drop Soup
(originally on epicurious.com, but this is my version)
5 cups water + 6 tsp. chicken base
1 heaping tbsp. chopped garlic
1 heaping tsp. minced ginger
1 Tbsp. soy sauce
2 Tbsp. sherry
1.5 Tbsp. sesame oil
Bring broth, base, garlic, ginger soy sauce, and oil to a boil. Reduce to a
simmer.
Whip up 3 eggs. Stir soup until swirling, then gradually drizzle in the eggs.
Let simmer for a minute WITHOUT STIRRING.
Add some chopped green onions and eat. You can also put noodles in before the
eggs. Like maybe a half pkg. of ramen noodles. Next time I'm going to add
baby shrimp.
