And this is for a friend wanting things for the freezer:
Grandma Lydia's Casserole
(which she called Mulligan Stew, but it's not)
6 or more slices of bacon, chopped
1 large onion, diced
8 oz. button mushrooms, sliced
1 - 28 oz. can crushed tomatoes in puree (If you can't find that, just used
diced or crushed tomatoes and maybe a small can of tomato sauce)
1 cup green pimiento stuffed olives, sliced
3 cups cooked chicken, chopped
1 pound of spaghetti, cooked
3 cups, or more, shredded cheddar. Or you can use some mozz or Monterey Jack
or Havarti or whatever you like.
Preheat oven to 350. Spray a lasagna pay with Pam.
In large deep skillet, cook bacon until browned and remove to paper towels.
Saute onions and mushrooms until they're as done as you like. Add tomatoes,
olives, bacon, salt, and pepper, and whatever other spices you want, like
oregano and basil. Bring to a boil and simmer for about 10 minutes. Add
chopped chicken and combine.
On bottom of pan, place half the spaghetti, half of the chicken sauce, and
halfthe cheese, repeat once more, and bake for one hour until hot and bubbly.
--Notes: This freezes so very well. It's an ultimate comfort food for me.
You can also just toss the pasta with the sauce and cheese and
pour it in the dish and top with more cheese.
If you don't like the green olives, skip 'em. Use black, or
noneat all.
There are a million ways to monkey with this dish.
